Acorn squash is a terrifically nutty and sweet vegetable. The outer skin is usually a deep green, but newer types of golden and white squash can be found.

When opened, the seeds are removed like a pumpkin and can be toasted for a great snack on the go. The rest of the vegetable can stuffed with a meaty rice filling or cut up and baked with spices for a fantastic dessert.
