January 2012 Pick of the Month: Peppy Parsnips!

If you’re looking for a vegetable to experiment with this winter, try parsnips. They are a hearty vegetable that develops a sweet taste after being exposed to the cold temperatures of winter.

At one point, parsnips were grown in large quantities for livestock. The Center for Digital Humanities of South Carolina reports that when cows eat parsnips, their milk is richer and produced in greater quantity. According to the Oregon State Extension gardening calendar, parsnips can be planted in May in different parts of Oregon and harvested throughout autumn and winter.
