Recipes and Dietary Guidelines

Coco Loco Chocolate Cake

This deliciously moist, quick, “no fail” recipe does not require milk or eggs. We love it served with fresh berries and frozen yogurt, or with a dollop of regular vanilla yogurt, sprinkled with cinnamon and topped with blueberries.

Ingredients:
3 Cups Flour
2 Cups Sugar
6 Tbsp. Cocoa Powder
1 tsp. Light Salt
2 tsp. Baking Soda
¼ Cup Light Olive Oil
¼ Cup Applesauce
2 Cups Water, divided
2 tsp. Vanilla
2 Tbsp. White Vinegar

Directions:

  • Preheat oven to 350 degrees.
  • Spray 9" x 13" pan with cooking spray.
  • In large bowl combine dry ingredients.
  • Add oil, applesauce and 1 cup water.
  • Beat until well mixed.
  • Add vanilla and the remaining cup of water. Mix.
  • Stir in vinegar. The batter will become foamy.
  • Pour into prepared pan. Bake 25 to 30 minutes or until inserted toothpick comes out clean.
  • Cool. Cut into squares.
