Coco Loco Chocolate Cake
This deliciously moist, quick, “no fail” recipe does not require milk or eggs. We love it served with fresh berries and frozen yogurt, or with a dollop of regular vanilla yogurt, sprinkled with cinnamon and topped with blueberries.
Ingredients:
3 Cups Flour
2 Cups Sugar
6 Tbsp. Cocoa Powder
1 tsp. Light Salt
2 tsp. Baking Soda
¼ Cup Light Olive Oil
¼ Cup Applesauce
2 Cups Water, divided
2 tsp. Vanilla
2 Tbsp. White Vinegar
Directions:
- Preheat oven to 350 degrees.
- Spray 9" x 13" pan with cooking spray.
- In large bowl combine dry ingredients.
- Add oil, applesauce and 1 cup water.
- Beat until well mixed.
- Add vanilla and the remaining cup of water. Mix.
- Stir in vinegar. The batter will become foamy.
- Pour into prepared pan. Bake 25 to 30 minutes or until inserted toothpick comes out clean.
- Cool. Cut into squares.
